Baked Fish in Banana Leaves
- 2 fish,can be fillet,chopped or whole fish like mine
- 2 lemongrass stalk
- 8 kaffir lime leaves
- 1 galangal,slices
- 4 clove garlic
- 10 hot thai chilli,dried or fresh
- 1 turmeric ,slices
- 1 tsp salt or use half tsp shrimps paste and half tsp salt
- 1/2 tsp fish sauce or soy sauce
- 1 bunch banana leaves
- 8 toothpicks
- Select fish ,fresh,clean ,tradition can be chopped fish ,small fish ,fish fillet ,or the whole one like i cook today,make fews cut on each side of fish if use whole one
- Slice lemongrass,galangal,turmeric ,seperate half amouth to make a paste ( pound or blend with chilli,salt ) the rest use to stuff fish,tear kaffir lime leaves ,set aside
- Clean and prepare banana leaves ,by tear big enough to cover the whole fish ,use at least 4 layers each
- In mixing bowl,add chilli paste to fish ,mix well with slices herbs ,add fishsauce ,or soya sauce ,stuff some herbs inside the fish
- Lay fish on prepared banana leaves ,wrap it up ,use toothpick to help
- Bake on charcoal on low heat until banana wrap dark ,or bake on pan on low heat ,cover lid
- Open and serve with fresh vegetables,rice
