Grilled Peaches With Chevre or Feta

  1. Peel peaches, cut in half and remove pits.
  2. Dust well with Thai spice mixture.
  3. Cover and hold for 30 minutes.
  4. Before cooking, spray peaches lightly with non-stick spray.
  5. Grill or broil until lightly browned on each side, turning often.
  6. Cook only until slightly softened.
  7. Remove and cool briefly.
  8. Cut peaches into large wedges and place on a bed of lettuce.
  9. Sprinkle with crumbled cheese and serve with crisp crackers or toast rounds.
