Lillikoi Hollandaise Sauce
- 3 egg yolks
- 1/4 lb. clarified butter
- 1 cup white wine
- 1 tsp. paprika
- 1 dash Tabasco
- 1 tsp. lemon juice
- 2 tsp. Lilikoi concentrate *
- 1 dash cayenne pepper
- Salt, to taste
- Whisk eggs, wine and Lilikoi sauce in a double boiler.
- Slowly fold in clarified butter and season with paprika, Tabasco, lemon juice and salt and pepper.
