Coconut Snowballs

  1. With a hand mixer, cream together butter and granulated sugar until fluffy.
  2. Beat in eggs, milk, and vanilla extract.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Gradually beat into the butter mixture.
  5. Refrigerate dough 1 hour.
  6. Preheat oven to 325 degrees F. Roll dough into 1-tablespoon-size balls.
  7. Bake for 20-30 minutes until golden brown.
  8. Let cool.
  9. To make icing, beat confectioners' sugar, powdered egg white, and water at high speed until smooth.
  10. With a fork, toss coconut flakes with food coloring.
  11. Dip top of each cookie in icing and roll in coconut.
