Rhubarb Soup
- olive oil
- 2 yellow onions, diced
- 2 tomatoes, diced
- 1 teaspoon garlic
- 1 teaspoon ginger
- 2 teaspoons paprika
- 1 teaspoon white pepper
- 2 sprigs tarragon
- 500 g rhubarb, sliced thin
- 2 liters chicken stock
- sweat onions in olive oil.
- add tomatos and cook till broken down.
- add minced garlic and ginger and paprika, and pepper.
- add tarragon and rhubarb.
- Cook 5 min then add chicken stock.
- season to taste.
