Creamy Black Bean Dip
- 1 block (8 Oz. Size) Neufchatel Cream Cheese
- 1 cup Shredded Colby-jack Cheese
- 1/2 cups Low Fat Sour Cream
- 1/2 cans (16 Oz. Size) Black Beans, Drained
- 1 Tablespoon Olive Brine (from A Jar Of Green Olives)
- 1/4 cups Green Stuffed Olives, Chopped
- Put cream cheese and shredded cheese in a glass microwavable mixing bowl.
- Microwave for about 30 seconds and then stir.
- You want the ingredients warm enough to blend well but not melted.
- Then add the sour cream and microwave for a few more seconds until just warm and stir well.
- Add the black beans, olive brine and olives.
- Mix well and serve with crackers or chips.
- This is a warm dip but can be enjoyed chilled especially if you want to spread it on crackers.
- A little secret: if I want to increase the fiber, I add 1 tablespoon of flax meal and it still tastes great.
