Grilled Pork Chops with Honey-Balsamic Glaze

  2. Brine your chops for at least 4 hours.
  3. Remove them from the brine and pat them dry.
  4. Let them rest and get up to room temperature.
  5. Measure the honey into a microwave-safe cup and microwave for about 15 seconds.
  6. This gets the honey all nice and liquidy and easy to work with.
  7. Add balsamic vinegar to the honey.
  8. Stir together.
  9. Ta-da!
  10. You have made a glaze!
  11. On a very hot grill-pan (or regular grill), place your chops and let them sear on the first side.
  12. Takes about 4 minutes.
  13. Then flip them and slather on the glaze.
  14. Cook for a minute or two, flip and add more glaze.
  15. Cook for another 30 seconds or so, flip and add more glaze.
  16. Keep flipping and glazing till your glaze is all gone and your chops are covered in caramelizing honey-vinegar goodness.
  17. Devour.
