Floating Fruit Parfaits
- 1/2 cup sliced fresh strawberries Safeway 1 lb For $3.99 thru 02/09
- 3/4 cup boiling water
- 1 pkg. (4-serving size) JELL-O Strawberry Flavor Sugar Free Gelatin
- ice cubes
- 1/2 cup cold water
- 1 cup plus 6 Tbsp. thawed COOL WHIP LITE Whipped Topping, divided
- Divide fruit evenly among 6 parfait glasses.
- Stir boiling water into gelatin in bowl 2 minutes until completely dissolved.
- Add enough ice to cold water to measure 1 cup.
- Add to gelatin; stir until ice is melted.
- Pour 3/4 cup of the gelatin over fruit in glasses.
- Refrigerate 20 minutes or until gelatin is set but not firm.
- Add 1 cup of the whipped topping to remaining gelatin; stir with wire whisk until well blended.
- Spoon over gelatin in glasses.
- Refrigerate 1 hour or until firm.
- Top with remaining whipped topping just before serving.
