Coffee Cardamom Brisket Rub
- 1/2 cup ground coffee
- 1/2 cup coarse salt (kosher or sea)
- 1/4 cup paprika (hot)
- 1/2 cup (packed) dark brown sugar
- 2 tbsp ground cardamom
- 2 tbsp ground ginger
- 1/3 cup chopped fresh garlic
- 1/2 cup vegetable oil, or as needed
- Combine all the ingredients, except the oil, in a bowl or food processor and stir or process to mix.
- Stir in enough oil to make a thick paste.
- The rub should be used the day it's made.
- Cover and refrigerate until using.
- *Smear the rub on the brisket on all sides and place in a roasting pan.
- Marinate, covered, in the refrigerator, for at least 4 hours, or as long as overnight.
