Twin Peak Crab
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 2 large stalks celery, chopped
- 1 egg
- 1 tsp. Grey Poupon mustard
- 1 Tbsp. ketchup
- dash of Tabasco sauce
- 1 lb. crab meat
- Old Bay seasoned bread crumbs
- salt and pepper
- butter or margarine
- cracker crumbs
- 1/4 c. each Mozzarella, Swiss and sharp cheese
- English muffins
- Saute onion, pepper and celery in butter.
- Add small amount of water to prevent drying.
- Add crab meat until hot.
- Put into mixing bowl and add egg, mustard, ketchup, Tabasco and seasoning to taste.
- Add Mozzarella and sharp cheese.
- Add cracker crumbs until consistency is right to hold mixture together.
- Toast 1/2 English muffin and put on cookie sheet or pie tin.
- Build crab mixture into mound on top of muffin.
- Top with slice of Swiss cheese.
- Toast under broiler until cheese melts.
