Lobster Croquettes Recipe

  1. Cut the tail on the bias to 1/4" slices.
  2. Place on a sheet pan.
  3. Cut remaining lobster into bite size pcs and mix with sauce.
  4. Put a dollop of sauce on each slice of lobster.
  5. Chill slices for at least 2 hrs.
  6. Bread lobster pcs.
  7. First flour, then egg, then crumbs.
  8. Fry in warm extra virgin olive oil till golden brown on both sides.
  9. Oil must be 325 degrees.
