Crushed Pineapple Carrot Salad Recipe
- 1 (20 ounce.) can crushed pineapple
- 1 (3 ounce.) pkg. lemon gelatin
- 1/2 c. sugar
- 1/4 teaspoon salt
- 2 tbsp. lemon juice
- 1 c. lowfat sour cream
- 1 c. finely grated carrots
- Drain pineapple.
- Add in water to juice to make 1 1/2 c.. Heat juice and water to a boil.
- Add in lemon gelatin, stir till dissolved.
- Add in sugar, salt, and lemon juice.
- Refrigeratetill slightly thick.
- Add in pineapple, carrots and mix in lowfat sour cream.
- Pour into mold and refrigeratetill set.
