BBQ Bacon Chicken Strips

  1. Preheat oven to 425 F.
  2. Line a rimmed baking sheet with aluminum foil or use a non-stick baking sheet pan.
  3. Set your boneless/skinless chicken breast on a clean work surface.
  4. Using a piece of waxed paper, cover the top and use a rolling pin to flatten out the chicken breast.
  5. Cut it width-wise into strips about 1/2 thick.
  6. Cut bacon slices in half down the center.
  7. Wrap each chicken strip with a bacon half and place on prepared baking sheet.
  8. In a saucepan add ketchup through maple syrup.
  9. Stir well with a spatula.
  10. Heat on medium low heat and cook for 3-4 minutes to mix ingredients.
  11. Remove saucepan from heat and use a brush to coat the bacon wrapped chicken strips with sauce.
  12. Place pan in the oven on the middle rack and bake for 18-20 minutes.
  13. Remove from oven and put the chicken strips on paper towels to absorb grease.
  14. Serve on a platter with toothpicks.
  15. Note: You can use a ramekin with warmed BBQ sauce for dipping, if desired.
  16. Enjoy!
