Chocolate Orange Fudgy Cake

  1. Grease or spray a 26 cm (10") tart tin or dish.
  2. Set oven to 160C.
  3. Place chocolate an butter in a medium saucepan.
  4. Melt over a low heat, whisking occasionally until combined.
  5. Remove from heat and add the sugar and vanilla.
  6. Whisk well.
  7. Add the lightly beaten eggs, then the dry ingredients.
  8. Stir in the orange zest.
  9. Stir mixture until smooth then spread in tart dish.
  10. Bake for 20 to 25 minutes until centre is just firm.
  11. Remove from oven and allow to cool for at least 10 minutes in the tin or dish.
  12. Turn on to a rack to finish cooling.
  13. Topping: Chop the 100g of dark chocolate into small pieces and place in a bowl.
  14. Bring the cream to the boil and pour over the chocolate.
  15. Stir until blended.
  16. Allow to cool stirring occasionally.
  17. Whisk until thick then spread over the cake.
  18. Decorate cake edge with shaved almonds.
