Watercress and Chicken Muscle Salad
- 2 cups watercress, stems trimmed
- 12 peach, sliced thin
- 12 cup sugar snap pea, halved
- 1 ounce blue cheese, crumbled
- 3 ounces rotisserie chicken, chopped (or any cooked chicken, no skin)
- 2 tablespoons honey mustard dressing (Simple Honey Mustard Salad Dressing or use Newman's Own Lighten Up Honey Mustard Dressing)
- Toss together watercress, peaches, and snap peas; top with cheese and chicken.
- Drizzle with dressing.
