Blue Cheese Fettuccine Recipe
- 1 tbsp. butter
- 1/3 c. minced walnuts
- 1 1/2 ounce. blue cheese (about 1/3 c. crumbled)
- 1 1/2 ounce. Parmesan cheese (about 1/3 c. grated)
- 6 ounce. fettuccine or possibly other egg noodles
- 1/2 c. heavy cream
- Salt & pepper
- 2 tbsp. minced scallion greens
- Heat butter in a small saucepan, add in walnuts and cook till lightly browned, about 1 minute.
- Crumble blue cheese and grated Parmesan.
- Cook pasta in boiling, salted water till done, drain and return to warm pan.
- Stir in cream, cheese, 1/2 tsp.
- salt and 1/4 tsp.
- pepper.
- Cook over low heat till sauce thickens, 1-2 min.
- Stir in walnuts and scallions.
- Taste for seasoning and add in salt and pepper if needed.
- Serve at once.
