Blue Cheese Fettuccine Recipe

  1. Heat butter in a small saucepan, add in walnuts and cook till lightly browned, about 1 minute.
  2. Crumble blue cheese and grated Parmesan.
  3. Cook pasta in boiling, salted water till done, drain and return to warm pan.
  4. Stir in cream, cheese, 1/2 tsp.
  5. salt and 1/4 tsp.
  6. pepper.
  7. Cook over low heat till sauce thickens, 1-2 min.
  8. Stir in walnuts and scallions.
  9. Taste for seasoning and add in salt and pepper if needed.
  10. Serve at once.
