Scalloped Sweet Spanish Onions
- 14 cup butter, melted
- 2 tablespoons butter
- 3 medium Spanish onions, sliced
- 14 cup green pepper, chopped
- 2 tablespoons pimiento, chopped
- 1 cup swiss cheese, grated
- 1 cup cracker crumb
- 2 eggs, beaten
- 34 cup light cream
- 1 teaspoon salt
- 18 teaspoon pepper
- 1 garlic clove, minced
- Melt 1/4 cup butter in skillet.
- Add the onions and green pepper and cook until tender.
- Stir in pimiento.
- Place half of mixture in shallow greased baking dish.
- Sprinkle with 1/2 cup Swiss cheese and 1/2 cup cracker crumbs.
- Repeat layers of cheese and onions.
- Beat eggs with cream, salt and pepper.
- Add the minced garlic.
- Pour over onions in baking dish.
- Mix the remaining 1/2 cup cracker crumbs with remaining 2 tablespoons melted butter.
- Sprinkle over top of dish.
- Bake at 325 degrees for 25 minutes or until set.
- Serve hot.
