Citrus Fruit Marcona Almond Salad

  1. Used mixed citrus fruit for added color.
  2. Cut the rind and pith of citrus fruit.
  3. (orange)
  4. Slice 2 thin slices, and put to side.
  5. Cut rind and pith of citrus fruit.
  6. (grapefruit)
  7. Slice 2 thin slices, and put aside.
  8. Remove pit from dates.
  9. Slice each date in half and then again into thin strips.
  10. Clean pomegranate wedge over bowl of water, break apart and let seeds fall to bottom of bowl.
  11. Drain.
  12. Set aside.
  13. Thinly slice parmigiano.
  14. Lay out salad onto serving platter.
  15. Put salad in large bowl, add salt if desired.
  16. Pour a very light drizzle around the inside of the bowl.
  17. Gently toss the leaves to evenly coat.
  18. Place on plate.
  19. Add lemon juice if desired.
  20. Add all ingredients by gently stuffing into the leaves.
