Cheddar & Two-Pepper Omelet
- 2 cups cholesterol-free egg product
- 1/4 cup water
- 1 each green and red pepper, chopped
- 1/2 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese
- 1/2 cup TACO BELL Thick & Chunky Salsa
- Whisk egg product and water until blended.
- Cook and stir vegetables in large nonstick skillet sprayed with cooking spray on medium-high heat 5 min.
- or until crisp-tender.
- Remove from skillet; set aside.
- Add egg mixture to skillet; cover.
- Cook 6 min.
- or until center is almost set.
- Top half the omelet with vegetable mixture and cheese; fold in half.
- Cook, covered, 3 min.
- or until cheese is melted.
- Serve topped with salsa.
