Coconut and Macadamia Nut Banana Bread

  1. Into a bowl sift together the flour, the baking powder, the baking soda, and the salt.
  2. In a large bowl with an electric mixer cream the butter with the sugar, beat in the vanilla, the eggs, 1 at a time, the zest, the banana, and the sour cream.
  3. Add the flour mixture, beat the batter until it is just combined, and stir in the macadamia nuts and the coconut.
  4. Pour the batter into a buttered and floured 9 by 5 by 3-inch loaf pan and bake the bread in the middle of a preheated 350 degree F. oven for 40 to 50 minutes, or until a tester comes out clean.
  5. Cool the bread on a rack.
  6. Cooled bread can be wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.
