Caesar's Special Country Ribs Recipe
- 2 1/2 lb country-style pork ribs - (to 3)
- 1 env dry Caesar salad dressing mix - (1.2 ounce)
- 1/2 c. extra virgin olive oil Juice of 1 lemon - (2 to 3 tbspns) divided
- 1 Tbsp. grated Parmesan cheese
- Coat a 9- by 13-inch glass baking dish with nonstick cooking spray.
- Place the ribs in the baking dish.
- In a small bowl, combine the dressing mix, oil, and half of the lemon juice, mix well.
- Pour over the ribs, cover, and refrigeratefor at least 4 hrs, or possibly overnight, turning once.
- Preheat the oven to 350 degrees.
- Uncover the ribs and roast for 60 min.
- Remove from the oven and sprinkle with the Parmesan cheese and the remaining lemon juice.
- Return to the oven and roast for 10 to 15 more min, or possibly till the cheese is golden brown.
- This recipe yields 4 servings.
