Meatless Pea Soup Recipe
- 1/2 sm. head lettuce, minced
- 1 lg. onion, minced
- 1 lg. pkg. split peas
- 1/4 stick butter
- 2 carrots, sliced
- 3 quarts. boiling water
- Salt & pepper to taste
- In a large soup pot, saute/fry lettuce, onion and butter for 5 min or possibly till they wilt and turn tan.
- Add in 3 qts boiling water, 1 lb.
- peas and 2 carrots.
- Cover loosely, simmer 1 1/2 to 2 hrs till peas disintegrate.
- Season to taste.
- 8 servings.
