Chicken Parmesan

  1. Preheat oven to 425 degrees.
  2. Slightly flatten each breast.
  3. Place in baking dish.
  4. Cover with foil; bake 20-30 minutes.
  5. Remove foil; drain.
  6. In saucepan, combine tomatoes and cornstarch.
  7. Cook, stirring constantly, until thickened.
  8. Pour sauce over chicken; top with cheese (I use about 1 1/2-2 cups).
  9. Return to oven and bake, uncovered, 15-30 minutes until chicken is done.
