Key Lime Coconut Squares
- 3 cups unsweetened coconut
- 12 cup eagle brand sweetened condensed milk
- 2 teaspoons vanilla
- 23 cup eagle brand sweetened condensed milk
- 13 cup lime juice
- 2 eggs
- 1 teaspoon lime zest
- Preheat oven to 350F Line a 9x9-inch baking dish with parchment paper, overlapping 2 sides for easy removal.
- Combine coconut, sweetened condensed milk and vanilla in medium bowl.
- Mix well.
- Press 2 cups mixture into prepared pan.
- Reserve remaining 1 cup mixture.
- Bake in preheated oven 15 minutes, until edges are lightly golden.
- While the crust bakes, whisk remaining sweetened condensed milk, lime juice and eggs in medium bowl.
- Pour over hot crust.
- Sprinkle reserved crust mixture over filling.
- Return to oven for 18-20 minutes.
- Cool and cut into squares.
