Fried Apple Pies
- 3 medium apples
- 1/3 c. sugar
- 2 tsp. cornstarch
- 1 tsp. lemon juice
- 1/2 tsp. cinnamon
- 1/4 tsp. ground nutmeg
- 1 1/2 c. plain flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. shortening
- 1/3 to 1/2 c. Crisco oil
- Cook sugar, cornstarch, lemon juice, cinnamon and nutmeg. Stir in apples until moist.
- Cover and cook until tender about 20 minutes; cool at room temperature and refrigerate.
- Combine flour, baking powder and salt.
- Cut in shortening and gradually add milk.
- Make into ball, wrap in plastic paper and refrigerate for 30 minutes.
- Divide into 16 pieces, make small ball and roll flat into 4-inch circle.
- Put a tablespoon of apples in center and moisten edges and press with floured fork.
- Heat about 1 1/2-inches oil and fry 2 to 3 pies at a time.
