Strawberry Ice Cream
- 1 lb frozen strawberries
- 1 cup of 2% plain Greek yogurt
- 14 cup sugar
- 12 teaspoon vanilla extract
- In a food processor with a knife blade, pulse 1 cup of strawberries until finely chopped.
- Transfer to large metal bowl.
- Puree yogurt, sugar, vanilla, and remaining strawberries in the food processer until smooth.
- Transfer to bowl with the chopped strawberries and stir until well combined.
- Cover and freeze about one hour--until firm but not hard.
