Mint Cookies'n Creme Cupcakes

  1. Preheat oven to 350 degrees.
  2. Line 24 muffin cups with liners.
  3. Cut each cookie into 6 pieces; reserve.
  4. On low speed, beat cake mix, pudding mix, 1 1/3 cups milk, eggs and oil until combined, 30 seconds.
  5. On medium speed beat 2 minutes.
  6. Gently stir in cookies.
  7. Divide among liners.
  8. Bake 17-19 minutes until toothpick inserted into centers comes out clean.
  9. Cool 5 minutes; remove from pans.
  10. Cool completely on racks.
  11. On medium speed, beat butter until smooth; gradually beat in sugar, vanilla, then remaining milk until fluffy.
  12. Spread frosting on cupcakes.
  13. If desired, garnish with additional cookies.
