Apple Cinnamon Bran Muffins
- 12 cup margarine, softened
- 2 cups white sugar
- 12 cup brown sugar
- 3 eggs
- 3 cups buttermilk
- 14 cup molasses
- 3 cups natural bran
- 4 cups whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 12 teaspoons cinnamon
- 1 teaspoon ginger
- 12 teaspoon allspice
- 14 teaspoon ground cloves
- 14 teaspoon salt
- 3 apples, peeled, cored and chopped coarsely
- 2 tablespoons lemon juice
- 1 12 cups walnuts, chopped coarsely
- Sprinkle apples with lemon juice to avoid discolouration.
- Set aside.
- Mix first six ingredients well in a large mixing bowl.
- Set aside.
- Combine bran, flour, baking powder, baking soda, spices, and salt.
- Add to wet ingredients, stirring just until combined.
- Fold in apples and walnuts.
- Remember, overmixing makes tough muffins.
- Fill 30-36 greased muffin tins 3/4 full and bake at 350F for 20-25 minute.
