Apple Cinnamon Bran Muffins

  1. Sprinkle apples with lemon juice to avoid discolouration.
  2. Set aside.
  3. Mix first six ingredients well in a large mixing bowl.
  4. Set aside.
  5. Combine bran, flour, baking powder, baking soda, spices, and salt.
  6. Add to wet ingredients, stirring just until combined.
  7. Fold in apples and walnuts.
  8. Remember, overmixing makes tough muffins.
  9. Fill 30-36 greased muffin tins 3/4 full and bake at 350F for 20-25 minute.
