Cauliflower Cheese Pot Pies
- 6 34 ounces creme fraiche
- 3 12 ounces grated cheddar cheese (the best kind you can get)
- 4 spring onions, shredded
- 1 head cauliflower, cut into florets (medium size)
- 3 12 ounces frozen peas, defrosted
- 13 14 ounces puff pastry, cut in 4 circles (to fit dishes)
- 1 egg, beaten
- 1 pinch crushed red pepper flakes (optional)
- salt, if needed
- fresh ground black pepper, if needed
- Het the oven to 360 degrees F.
- Mix the creme fraiche, cheddar, spring onions, cauliflower and peas and divide between 4 small ovenproof dishes.
- Top with pastry circles, press down firmly and glaze with the egg.
- Bake for 25-30 minutes until crisp and golden.
