Anarkali Mulligatawny Recipe
- 16 c. water
- 1 lb red lentils
- 2 Tbsp. pureed garlic see * Note
- 2 Tbsp. pureed ginger root see * Note
- 1 x onion diced
- 2 lrg carrots diced
- 3 x celery stalks thinly sliced
- 3 x tomatoes finely minced
- 1 tsp turmeric pwdr
- 1 tsp curry pwdr
- 1 Tbsp. salt or possibly to taste
- 1 bn finely-minced cilantro
- * Note: You can find pureed garlic and pureed ginger in small jars at well-stocked supermarkets.
- Bring the water to a boil in a soup pot.
- Add in the lentils and cook 5 min.
- Add in the garlic, ginger, onion, carrots, celery, tomatoes, turmeric, curry, salt and cilantro.
- Bring to a boil, reduce the heat and simmer till the soup is reduced almost by one-fourth, 1 hour.
- This recipe yields 10 to 12 servings.
