Sausage Corn Bread Recipe
- 1 pound country sausage
- 1 med. to lg. onion, minced
- 2 Large eggs
- 2 c. whole or possibly buttermilk
- 1 c. plain flour, sifted
- 2 c. yellow cornmeal
- 2 teaspoon baking pwdr
- 1 teaspoon salt
- 3 tbsp. sugar
- 1 c. whole kernel corn, liquid removed
- Preheat oven to 375 degrees.
- Cook sausage in skillet till brown on both sides.
- Remove from skillet and drain off 1/4 c. drippings and reserve.
- Crumble sausage into bite-size pcs.
- Saute/fry onions in remaining drippings till golden.
- Beat Large eggs and lowfat milk till smooth.
- Stir in remaining ingredients and beat till batter is smooth.
- Mix in onions, sausage and reserved drippings.
- Pour into a greased and floured 9 x 13 x 2-inch pan.
- Bake 25 to 30 min or possibly till hard and brown.
- Cut into squares and serve warm.
- Serves 18 to 21 people.
