Saucy Honey-Dijon Chicken
- 1 tablespoon olive oil
- 1 teaspoon all-purpose flour
- 14 teaspoon ground black pepper
- 14 cup honey dijon mustard
- 1 lb boneless skinless chicken breast half, cut into 1-inch chunks
- 1 medium onion, chopped
- 1 (14 1/2 ounce) can chicken broth (1 3/4 cup)
- In 12-inch skillet, heat oil over med-high hear until very hot.
- In medium bowl, combine flour and pepper.
- Add chicken; toss to coat.
- Place chicken in skillet and cook, stirring frequently until it just loses it's pink color throughout, 4-6 minute Transfer chicken to plate.
- Reduce heat to medium.
- Add onion to skillet and cook, stirring occasionally, until browned, 3-4 minute Transfer to plate with chicken.
- Increase heat to high.
- Add broth to skillet.
- Cook until sauce has thickened slightly, 6-8 minute With wire whisk, whisk in mustard.
- Return chicken and onion to skillet; heat through.
