Mama's Rice and Zucchini Casserole
- 2 lbs zucchini
- 13 cup chopped parsley
- 1 cup uncooked rice
- 3 beaten eggs
- 1 cup grated cheddar cheese
- 13 cup melted butter
- 12 cup sliced onion
- 1 teaspoon rosemary
- 1 teaspoon garlic powder
- 12 teaspoon Accent seasoning (optional)
- salt and pepper
- paprika
- Cook the rice as per package instructions.
- Parboil the zucchini for 15 minutes, cool and chop.
- Mix all the ingredients together and sprinkle with paprika.
- Bake at 350 for 1 hours.
