Banh Mi Bites

  1. Beat the pate, mayonnaise, ginger and soy sauce in a bowl with a mixer until light and airy, 1 to 2 minutes.
  2. Cover and refrigerate until ready to use.
  3. Preheat the oven to 375 degrees F. Arrange the baguette pieces on a baking sheet and bake until slightly toasted, about 10 minutes; let cool.
  4. Meanwhile, make the dressing: Whisk the vinegar, vegetable oil, lime zest and juice, and 1 teaspoon salt in a bowl.
  5. Add the carrot and daikon and toss.
  6. Spread some of the pate mixture on each piece of bread; top with Sriracha, the carrot-daikon salad and cilantro.
