Shrimp and New Potato Salad

  1. Chop shrimp into bite-sized pieces; place in medium bowl.
  2. Add potatoes, celery and onion; mix lightly.
  3. Mix mayo, horseradish, ketchup, salt and pepper until well blended.
  4. Add to shrimp mixture; mix lightly.
  5. Cover; refrigerate at least 1 hour or until chilled.
  6. Arrange lettuce leaves on chilled platter.
  7. Top with shrimp salad.
