Chocolate-Dipped Kettle Chips

  1. Line a baking sheet with parchement or waxed paper.
  2. In a small microwave-safe bowl, combine chocolate and vegetable oil.
  3. Microwave on high, stopping to stir every 30 seconds, for 1-2 minutes, or until chocolate is melted and smooth.
  4. One at a time, dip chips into melted chocolate and set on the baking sheet.
  5. Sprinkle with one of the toppings - pistachios, salt or cayenne.
  6. Repeat with remaining chips.
  7. Refrigerate for 30 minutes.
