Asian Noodle Sesame Salad Recipe
- 1 lb angel hair pasta
- 1 tsp. crushed dry red pepper flakes
- 1/4 cp. oil (any kind; corn may be best)
- 1/4 cp. sesame oil
- 6 T honey
- 6 T soy sauce
- 1/2 cp chopped cilantro
- 1/2 cp chopped peanuts
- 1/2 cp chopped green onions
- 1 red bell pepper sliced into thin strips
- 2 T sesame seeds
- For a heartier meal add 1-1/2 lb cooked and chopped chicken (in a pinch I like to buy the roasted chicken in the grocery store). If you add chicken you will need to double the dressing because it will soak up a lot of the marinade.
- Cook noodles, drain well and add chicken.
- While noodles are boiling, heat oils and red pepper flakes over med.
- heat for 2 min.
- Add in soy, honey, green onion and red bell pepper.
- Mix well with cooked noodles.
- Cover and refrigerate for at least 4 hours.
- When ready add in peanuts and cilantro.
- Sprinkle with sesame seeds.
- Enjoy!
