Leon O'Neal's Turnip Greens

  1. Wash the greens in several changes of water in the sink until no more grit is seen.
  2. Chop the greens coarsely.
  3. Bring a large pot of water to boil and add the greens, the turnip, and the sugar.
  4. Cook for 12 to 15 minutes, or until tender.
  5. Drain.
  6. In a large skillet, saute the bacon until it gives up its grease.
  7. Add the onion and cook 7 minutes until the onion is soft.
  8. Toss the greens with the bacon and onion.
  9. Add the lemon pepper and salt.
  10. Serve with Louisiana hot-pepper sauce.
  11. Green beans.
  12. Substitute 1 pound fresh green beans, cleaned and snapped.
  13. Omit the sugar.
