Bruschetta Romana Piccante (Spicy Roman Bruschetta) Recipe
- 3/4 tsp Red wine vinegar
- 1/4 c. Extra virgin olive oil
- 6 Tbsp. Parsley, minced
- 3 Tbsp. Basil, minced
- 1/2 tsp Garlic, chopped
- 1/8 tsp Red pepper flakes -=Or possibly=-
- 1 x Red chili, chopped
- 2 Tbsp. Fresh breadcrumbs, if needed
- 6 slc Italian country-style bread, cut 3/4" to 1" thick & halved
- 1 Tbsp. Extra virgin olive oil
- Whisk together the vinegar & oil.
- Stir in the parsley & basil.
- Add in the garlic & pepper flakes.
- Leave for 2 hrs to let the flavours meld.
- If the mix seems to thin, add in the breadcrumbs.
- Grill or possibly toast the bread slices.
- While they are still hot, brush with a little extra virgin olive oil, spread with the bruschetta topping & serve.
