Shrimp cocktail!
- 1 cup shredded iceberg lettuce
- 3 tbsp chopped cilantro/coriander
- 3 tbsp chopped green/spring onion
- 2 tomatoes, chopped
- 1/4 cup cucumber, chopped
- 12 ready to eat shrimp
- 1/3 lime
- 1 tbsp olive oil
- 1 avocado, chopped
- 4 tbsp tomato ketchup
- 3 tbsp fresh mayonnaise
- 1 dash of paprika
- In a large mixing bowl, combine lettuce, tomato, cucumber, cilantro and shrimp.
- Squeeze the lime over ingredients and add the olive oil, mixing thoroughly.
- Fold in avocado chunks carefully as to keep them in tact
- In separate bowl, mix the mayo, ketchup and paprika until a light pink sauce.
- Fill serving bowl halfway with salad mixture, then drizzle a tbsp of sauce over.
- Continue to fill the bowl with salad, drizzle a further 1-2 tbsp sauce ontop.
- Then sprinkle green /spring onion ontop to garnish.
