Cappuccino Chip Muffins Recipe
- 2 c. all-purpose flour
- 1/2 c. sugar
- 2 1/2 tsp baking pwdr
- 2 tsp instant espresso coffee pwdr
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 c. lowfat milk scalded and cooled
- 1/2 c. butter melted and cooled
- 1 x egg slightly beaten
- 1 tsp vanilla
- 3/4 c. semisweet chocolate mini chips
- Grease muffin c..
- In a large bowl stir together the first six ingredients.
- In a separate bowl stir together the lowfat milk, butter, egg and vanilla till blended.
- Make a well in the center of the dry ingredients and add in the lowfat milk mix.
- Stir just to combine.
- Stir in the mini chips.
- Spoon the batter in to the prepared muffin c.. Bake in a 375 degree oven for 15 to 20 min.
- Makes 12 muffins or possibly 24 mini muffins
