Dumpling Soup

  1. Put the broth and collard greens in a large saucepan and set the pan over medium-high heat.
  2. Bring the mixture to a simmer.
  3. Meanwhile, in a medium bowl, combine the pork, ginger, soy sauce, and sesame oil.
  4. Arrange the wonton wrappers on a flat surface.
  5. Spoon the pork filling onto the center of each wrapper, to within 1/4 inch of the edges (about 1 teaspoon per wrapper).
  6. With wet fingers, pinch the edges together to seal, forming a triangle.
  7. Then bring the side points together and press together.
  8. Place the stuffed wontons into the slowly simmering broth.
  9. Cook for 8 minutes or until the wontons are tender and translucent.
  10. Remove the pot from the heat and stir in the green onions.
