Blt Salad With Sweet Onion Vinaigrette

• Dressing:
• 2 tablespoons apple cider vinegar
• 1 1/2 tablespoons honey
• 2 tablespoons finely chopped sweet onion
• 2 teaspoons coarse-grain mustard
• 1/4 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1/4 cup olive oil
• Salad:
• 4 hard-cooked eggs, peeled
• 8 cups mixed greens
• 1 1/2 cups grape tomatoes, halved
• 4 slices bacon, cooked and chopped

1. Dressing: In a small bowl combine apple cider vinegar, honey, onion, mustard, salt and pepper. Slowly whisk in oil. Set aside.
2. Salad: Finely grate or chop 2 eggs; slice remaining 2 eggs. In a large salad bowl, combine greens, tomatoes, bacon and grated eggs. Toss with dressing to coat and garnish with remaining egg slices. Serve immediately.
