Spiced Yam Pudding

  1. Preheat oven to 350F.
  2. Butter 8 x 8 x 2-inch glass baking dish.
  3. Beat yams and sugar in large bowl until smooth, about 3 minutes.
  4. Beat in eggs 1 at a time.
  5. Beat in orange peel, salt and spices, then half and half, orange juice and butter.
  6. Transfer yam mixture to prepared dish.
  7. Bake pudding until puffed and set in center, about 1 hour 15 minutes.
  8. Let stand 15 minutes.
  9. Serve warm.
