Chinese Barbecued Pork (Ch'a Hsao Jou) Recipe

  1. Tie roast with butchers twine into a 2-3 inch width roll.
  2. Marinate for 4-5 hrs in sauce (see below).
  3. Drain.
  4. Roast on rack in warm oven (375 degrees F.) for 30 min.
  5. Reduce to medium heat (350 degrees F.) and continue roasting for another 30 min, basting occasionally with marinade.
  6. Let roast rest for 10-15 min prior to slicing.
