Banana Coffee Bread
- 1/2 c. shortening
- 1 c. sugar
- 2 eggs
- 3/4 c. mashed banana
- 1 1/4 c. flour
- 3/4 tsp. soda
- 1/2 tsp. salt
- 1 1/2 c. raw (unprocessed) bran
- 1 1/4 c. whole wheat pastry flour
- 1 1/2 tsp. baking soda
- 3/4 tsp. light salt
- 2 1/2 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 1/2 c. raisins
- 1/3 c. brown sugar
- 1/4 c. dark molasses
- 3 Tbsp. oil
- 1 egg
- 1 c. nonfat milk
- Preheat oven to 400u0b0.
- Combine bran, flour, baking soda, light salt, cinnamon, nutmeg and raisins in a bowl.
- Mix thoroughly. Beat brown sugar, molasses, oil, egg and milk in a bowl.
- Add wet ingredients to dry and stir until ingredients are moist.
- Fill muffin tins 2/3 full of batter.
- Bake for 15 to 18 minutes. Servings equal 1 starch and 1/2 fat.
