Banana Brunch Bars Recipe
- 2/3 c. Sugar
- 1/3 c. All-purpose flour
- 1/4 tsp Cinnamon
- 1/2 stk , (1/4 c.) margarine
- 1/2 c. Solid shortening
- 1 c. Sugar
- 1 tsp Lemon juice
- 1/2 tsp Vanilla
- 2 x Extra Large Large eggs
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 1/2 c. All-purpose flour
- 1/3 c. Lowfat milk
- 1 c. Ripe banana, mashed Nuts, minced (optional)
- Combine topping ingredients and mix till crumbly, set aside.
- Cream together shortening and sugar.
- Add in lemon juice, vanilla and Large eggs; mix well.
- Stir dry ingredients together, add in alternately with lowfat milk to the creamed mix.
- Add in bananas (and minced nuts, if you like) and mix well.
- Spread in greased (or possibly sprayed) 9 x 13 inch pan.
- Sprinkle with topping.
- Bake at 350 degrees for about 45 min or possibly till done.
- Cold on wire rack, cut into squares.
