Boneless Breast Kabobs Recipe
- 4 whole boneless chicken breasts, halved and cut into 3 pcs
- 1/2 c. oil
- 2 tbsp. wine vinegar
- 1 tbsp. soy sauce
- 1 lg. clove garlic, chopped
- 20 cherry tomatoes
- 3 med. onions, cut into quarters and separated
- Combine chicken with next 4 ingredients.
- Cover and chill 2 hrs or possibly overnight.
- Remove chicken from marinade.
- Thread chicken onto skewers alternating with tomatoes and onions.
- Grill 6 to 8 inches from heat about 20 min, turning every 5 min and brushing with remaining marinade.
- Tender chicken breast kabobs make a variety of unusual low calorie entrees.
- Serves 4.
