Raw Zucchini Pasta with Basil Avocado Sauce
- 3 whole Zucchini, Washed
- 1/2 Avocado, Peeled And Pitted
- 3/4 Onion, Peeled And Quartered
- 3 cloves Garlic, Peeled
- 2 cups Almond Milk
- 1/4 cups Raw Cashews
- 4 Tablespoons Bragg's Liquid Aminos
- 13 cups Nutritional Yeast
- 1 dash Sea Salt, Pepper And Cayenne
- 1 cup Cauliflower Florets
- 3/4 cups Fresh Basil Leaves
- Optional For Garnish: Diced Tomatoes, More Basil Leaves
- Slice zucchini into noodles using a mandoline.
- Place noodles in a bowl and set aside.
- Blend the rest of the ingredients (except garnishes) with a high-powered blender.
- I heat the zucchini in a skillet over low heat, just to warm it (my preference).
- Place it back in the bowl and toss in the sauce, using as much sauce as desired.
- I add tomatoes and fresh basil before serving.
- There will be extra sauce you can refrigerate and use for salad dressing.
