Raw Zucchini Pasta with Basil Avocado Sauce

  1. Slice zucchini into noodles using a mandoline.
  2. Place noodles in a bowl and set aside.
  3. Blend the rest of the ingredients (except garnishes) with a high-powered blender.
  4. I heat the zucchini in a skillet over low heat, just to warm it (my preference).
  5. Place it back in the bowl and toss in the sauce, using as much sauce as desired.
  6. I add tomatoes and fresh basil before serving.
  7. There will be extra sauce you can refrigerate and use for salad dressing.
  8. Enjoy!
