Smothered Cabbage Wedges Recipe
- 1 med. cabbage, cut in 8 wedges
- 1/2 c. green pepper, finely minced
- 1/4 c. onion, finely minced
- 4 tbsp. butter
- 1/4 c. flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper (optional)
- 2 c. lowfat milk
- 1/2 c. mayonnaise or possibly salad dressing
- 3/4 c. shredded Cheddar cheese
- 3 tbsp. chili sauce (optional)
- In large skillet, cook cabbage wedges in small amount of boiling salted water till tender, about 12 min.
- Drain well.
- Placed cooked cabbage wedges in 9 x 13 inch pan.
- In saucepan, cook green pepper and onion in butter till tender, not brown.
- Blend in flour, salt and pepper.
- Add in lowfat milk all at once; cook and stir till mix thickens and bubbles.
- Pour over cabbage; bake, uncovered, at 375 degrees for 20 min.
- Combine mayonnaise, cheese and chili sauce; spoon atop wedges.
- Bake 5 min more.
